Is there anything that screams rainy and cozy weekend more than a batch of mug rolls fresh out of the oven?! We're already getting into the festive mood here and decided to give this delicious recipe a twist - we added our RELAX mix which contains quirky spices like cardamom and cinnamon.
As we discussed in the last " WHAT TO EAT " post about ingredients that relieve headaches, we decided to combine banana and chopped almonds in this recipe - in addition to the relaxing mixture. All ingredients that naturally help relieve tension and headaches.
Whether you're preparing for a weekend brunch or a midweek treat, these " RELAX " Rolls with caramelized banana are cute and perfect.

6 tablespoons of unsalted butter, melted and slightly cooled (plus 1 tablespoon for greasing the bowl)

2 teaspoons of baking powder

1 egg

⅓ cup of sugar (we use dermarraza)

4 cups of flour, we used white spelt flour (extra for rolling out the dough)

1 teaspoon of salt
FILLING
-
½ cup unsalted butter, softened
-
¾ cup brown sugar
-
2 tablespoons of the RELAX mixture
-
2 large bananas, cut into pieces
-
¼ cup chopped almonds
COVERAGE

115g of cream cheese, at room temperature
-
2 tablespoons of butter, room temperature
-
1 1/2 cups confectioners' sugar
-
1 tablespoon of milk (adjust to achieve desired consistency)
PREPARATION
1. Preparing the Dough
Melt the butter and let it cool to room temperature. Gently heat the milk (to about 43°C).
In a large bowl, mix the milk with the yeast. Add the egg, sugar, and melted butter. Mix well.
Add the flour and salt and mix until a dough forms.
Transfer to a floured surface and knead for 3 to 4 minutes until the dough is smooth and elastic. Form into a ball, place in a greased bowl, cover, and let rise in a warm place for 2 hours or until doubled in size.
2. Preparing the Filling
Mix the softened butter with the brown sugar and the RELAX until you obtain a creamy paste.
Slice the bananas and chop the almonds.
3. Assembling the Rolls
After the dough has risen, roll it out into a large rectangle. Spread the " relax " mixture evenly, leaving a margin at the edges. Distribute the chopped bananas and almonds on top.
Carefully roll out the dough, trim the ends, and cut into 4 to 5 large rolls using a sharp knife or (unflavored) dental floss.
4. Second Leavening
Arrange the rolls in a greased baking dish. Cover and let rest for another 30 to 45 minutes.
5. Cook
Preheat the oven to 175°C. Bake for 25 to 30 minutes, until golden brown and fluffy.
6. Preparing the Cover
Beat the cream cheese and butter together until smooth. Add the powdered sugar and milk, and beat until a smooth cream forms. Adjust the consistency as needed.
7. Finish and Serve
Let cool for 10 minutes and, while still warm, spread the topping over them so that it melts into the layers.
Garnish with more banana slices and chopped almonds for a pastry-worthy finish.
