Best Chocolate Cake Recipe

Cake ingredients:

  • 400g of good quality chocolate
  • 125g of unsalted butter
  • 4 Big eggs
  • 1 tablespoon of sugar
  • 1 tablespoon of flour without yeast

Ingredients for the coffee crème:

  • 200g of mascarpone
  • 1 tablespoon of coffee powder
  • 2 tablespoons of powdered sugar

Preparation mode:

  1. Preheat the oven at 200ºC and line a spring shape with parchment paper. Grease with butter and set aside.
  2. Melt the chocolate and butter in a water bath, mix until a homogeneous mixture. Remove from heat and let cool slightly.
  3. In a bowl, beat the eggs with sugar using an electric mixer for 8 - 10 minutes, until triple in volume and the mixture is thick.
  4. Gently incorporate the flour into the egg mixture, followed by the melted chocolate.
  5. Pour the preparation in previously prepared form and bake for 12 minutes.
  6. Remove the cake from the oven and wipe a knife around to loosen the cake. Remove the rim from the pan and place the cake in the fridge to cool for 1 hour (this step is essential to ensure the mousse texture).

Preparation of the coffee crème:

  1. Mix all the ingredients in a bowl and beat well until you get a smooth and creamy cream.
