Creamy chocolate mousse cake recipe with coffee crème

Cake ingredients:
- 400g of good quality chocolate
- 125g of unsalted butter
- 4 Big eggs
- 1 tablespoon of sugar
- 1 tablespoon of flour without yeast
Ingredients for the coffee crème:
- 200g of mascarpone
- 1 tablespoon of coffee powder
- 2 tablespoons of powdered sugar
Preparation mode:
- Preheat the oven at 200ºC and line a spring shape with parchment paper. Grease with butter and set aside.
- Melt the chocolate and butter in a water bath, mix until a homogeneous mixture. Remove from heat and let cool slightly.
- In a bowl, beat the eggs with sugar using an electric mixer for 8 - 10 minutes, until triple in volume and the mixture is thick.
- Gently incorporate the flour into the egg mixture, followed by the melted chocolate.
- Pour the preparation in previously prepared form and bake for 12 minutes.
- Remove the cake from the oven and wipe a knife around to loosen the cake. Remove the rim from the pan and place the cake in the fridge to cool for 1 hour (this step is essential to ensure the mousse texture).
Preparation of the coffee crème:
- Mix all the ingredients in a bowl and beat well until you get a smooth and creamy cream.
