Ingredients for the Cake:
- 400g of good quality chocolate
- 125g of unsalted butter
- 4 large eggs
- 1 tablespoon of sugar
- 1 tablespoon of all-purpose flour
Ingredients for Coffee Cream:
- 200g of mascarpone
- 1 tablespoon of ground coffee
- 2 tablespoons of powdered sugar
Preparation method:
- Preheat the oven to 200ºC and line a springform pan with parchment paper. Grease with butter and set aside.
- Melt the chocolate and butter in a double boiler, stirring until smooth. Remove from heat and let cool slightly.
- In a bowl, beat the eggs with the sugar using an electric mixer for 8-10 minutes, until tripled in volume and the mixture is very thick.
- Gently incorporate the flour into the egg mixture, followed by the melted chocolate.
- Pour the mixture into the prepared pan and bake for 12 minutes.
- Remove the cake from the oven and run a knife around the edge of the pan to loosen it. Remove the ring from the pan and place the cake in the refrigerator to chill for 1 hour (this step is essential to ensure a mousse-like texture).
Preparation of Coffee Cream:
- Mix all the ingredients in a bowl and beat well until you obtain a smooth and creamy batter.
Serving Tips:
Serve the chocolate mousse cake with coffee cream for an extra touch of flavor, or, if you prefer something lighter, accompany it with Greek yogurt .
