Chocolate and Tofu Mousse

This is a recipe I have been making for over 20 years. The years go by and I always come back to it. It's really quick to make and contains only 4 ingredients that I always have on hand.

So when I need "that" sweet treat, which has to be quick and healthy sometimes I remember this mousse.

Serves 4


  • 100gr of Chocolate
  • 300gr organic Silken Tofu, at room temperature
  • 2 tablespoons Acer Syrup, extra if desired
  • 1 teaspoon vanilla powder or essence


  1. Melt the chocolate in a double boiler. Stir from time to time until melted. Remove from heat and let it come to room temperature.
  2. Drain the tofu, gently so it doesn't fall apart. Rinse it in cold water. Place in a blender with the acer syrup and vanilla. Add the melted chocolate and blend until smooth.
  3. Divide into glasses or bowls and store in the refrigerator for 20 minutes or until firm. This step is really important for the mousse to be creamy and thick.
  4. Decorate with red fruits if you wish and enjoy!

*I only use certified organic tofu. Very important indeed.
