A chocolate-flavored "catch me" treat that's good for you! A granola rich in protein and superfoods that help us feel more energetic and clear-headed to face the day.
You can eat it on top of yogurt, açaí...with plant-based milk. Or take it to work and eat it whenever you're hungry or feeling a bit "sluggish".

Ingredients:
Makes 4 cups
- 2 cups of rolled oats
- 1/4 cup Protein Energy
- 1/4 cup sunflower and/or sesame seeds
- ¼ cup coconut oil or virgin olive oil
- ½ cup maple syrup, or another sweetener of your choice.
- 1 teaspoon of vanilla
- ⅓ cup raw cocoa powder
- 1 tablespoon of ground cardamom

½ cup coconut flakes (or shredded coconut)
Preparation:
- Preheat the oven to 170°C and line a baking sheet with parchment paper.
- In a large bowl, combine the oats, protein powder , and seeds. Set aside.
- In a medium bowl, combine the olive oil, maple syrup, and vanilla. Mix well. Add the cocoa powder and cardamom, and incorporate.
- Combine the cocoa mixture with the oat mixture, mixing well. Taste and add more maple syrup if needed.
- Pour the granola into the prepared pan. Spread it with the back of a large spoon to create an even layer.
- Bake for 10 minutes. Remove from the oven and flip to cook evenly. Return to the oven for another 10 minutes or until it begins to brown. Pay close attention to this final step, as the granola can burn very easily.
- Remove from the oven and add the grated coconut, if desired. Stir to combine.
- Allow to cool completely before serving or storing. Granola can be stored in a glass jar for two to three weeks.
