Super Energy Chocolate Granola

A “pick-me up” with chocolate flavor, which is good for you! A granola rich in protein and super foods that help us feel more energetic and ready to face the day.

You can eat it over yogurt, açaí... with vegetable milk. Or take it to work and eat it whenever you’re hungry or feel softer.

Ingredients:
Makes 4 cups

  • 2 cups of oat flakes
  • ¼ cup Protein Energy
  • ¼ cup sunflower and/or sesame seeds
  • ¼ cup coconut oil or virgin olive oil
  • ½ cup maple syrup, or other sweetener you like
  • 1 teaspoon vanilla
  • ⅓ cup raw cocoa powder
  • 1 tablespoon cardamom powder
  • ½ cup coconut chips (or grated coconut)

Preparation:

  1. Preheat the oven to 170°C and line a tray with baking paper.
  2. In a large bowl, mix the oats, protein and seeds. Reserve.
  3. In a medium bowl, add the olive oil, maple syrup and vanilla. Mix well. Add the cocoa powder and cardamom, incorporate.
  4. Add the cocoa mixture to the oat mixture, mixing well. Taste and add more maple syrup if necessary.
  5. Pour the granola into the prepared pan. Spread with the back of a large spoon so that you have a level layer.
  6. Place in the oven for 10 minutes. Remove from the oven and turn to cook evenly. Place back in the oven for 10 minutes or until it starts to turn golden. Pay attention to this final part, as the granola can burn very easily.
  7. Remove from the oven and add the grated coconut, if desired. Engage.
  8. Let cool completely before serving or storing. Store the granola in a glass jar for two to three weeks.
