CARAMEL AND MACA POPCORN
Why not make some popcorn? The weather is calling for something homemade and warm. This popcorn is super yummy but super healthy ;)
The trick? Use the oven! Give it a try and you won't regret it.
Ingredients:
Serves 4 to 6

1 tablespoon coconut oil

1/2 cup popcorn corn

1/4 cup maple syrup or other sweetener to taste

1 tablespoon almond butter
-
1 tablespoon raw cocoa powder

1 teaspoon of maca
-
1 teaspoon of cardamom powder

1 teaspoon vanilla extract

1/2 teaspoon fleur de sel

1/4 cup chopped almonds or walnuts
Preparation:

Preheat the oven to 160ºC. Line a baking tray with greaseproof paper and set aside.

Melt the coconut oil in a medium saucepan over a high heat. Carefully add the corn and cover. Shake the pan well every 10 seconds while they pop, so as not to burn the popcorn. When the popping stops, remove the pan from the heat and pour the popcorn into a large bowl.

In a blender jug, add the maple syrup, almond butter, cocoa, maca, cardamom, fleur de sel and vanilla. Blend until incorporated.

Add the almonds to the popcorn. Drizzle with the almond mixture and toss to coat. Spread the popcorn on the prepared tray and bake for 6 minutes. Turn the popcorn over with a large spoon or spatula so that it is evenly roasted. Leave for another 2 to 3 minutes, or until the popcorn is golden and colored.

Remove from the oven and sprinkle with another pinch of fleur de sel. Let the popcorn cool slightly on the tray before eating. *
*Be careful, let the popcorn cool a little after taking it out of the oven. The wait will save you some burnt and sticky fingers. It's well worth it!
