I love banana cake and I love chocolate, so it's no surprise that this is one of my favorite cakes.

If you have intolerances or are vegan, this recipe has the appropriate substitutions - without ever losing the consistency and deliciousness of each slice.


Chocolate and Banana Marble Cake

serves 6 to 8

Ingredients

  • 1 cup of crushed bananas (2 to 3 very ripe)

  • 3/4 cup brown, yellow or coconut sugar

  • 2 tablespoons melted butter or olive oil

  • 1/3 cup coconut, almond or other milk of your choice

  • 1 cup spelled or buckwheat flour

  • 1/2 cup almond flour (you can choose to use 1 and 1/2 cup spelled flour in full instead of this flour)

  • 2 teaspoons of vanilla essence

  • 1/2 teaspoon baking soda

  • Pinch of salt

  • 2 tablespoons of cocoa

  • 3 tablespoons of hot water

Preparation
  1. Heat the oven to 170ºC. Line a cake pan with parchment paper. Reserve.

  2. In a bowl, mix the banana, sugar, coconut oil, milk and vanilla well.

  3. Add the flour, bicarbonate and salt. Incorporate.

  4. Take 1 cup of this mixture and place it in a small bowl. Add the cocoa and hot water. Mix.

  5. Drop spoonfuls of both batters into the prepared pan. With a knife or toothpick, make circles to mix the dough and create a marbled effect.

  6. Bake for 40 minutes or until cooked inside.
