Chocolate and Banana Marble Cake

 

I love banana cake and I love chocolate, so it's no surprise that this is one of my favorite cakes.

If you have intolerances or are vegan this recipe has the proper substitutions - without ever losing the consistency and deliciousness of each slice.


Chocolate and Banana Marble Cake

Serves 6 to 8

Ingredients

  • 1 cup of mashed bananas (2 to 3 very ripe ones)

  • 3/4 cup brown, brown or coconut sugar

  • 2 tablespoons ofmelted butter or olive oil

  • 1/3 cup coconut, almond or other milk you like

  • 1 cup spelt flour or buckwheat flour

  • 1/2 cup almond flour (you may choose to use 1 and 1/2 cups spelt flour in its entirety instead of this flour)

  • 2 teaspoons vanilla essence

  • 1/2 teaspoon baking soda

  • Pinch of salt

  • 2 tablespoons of cocoa

  • 3 tablespoons hot water

Preparation
  1. Heat the oven to 170ºC. Line a cake pan with baking paper. Set aside.

  2. In a bowl mix well the banana, sugar, coconut oil, milk and vanilla.

  3. Add the flours, baking soda and salt. Incorporate.

  4. Remove 1 cup of this mixture and place in a small bowl. Add the cocoa and hot water. Mix together.

  5. Pour tablespoons of both mixtures into the prepared pan. With a knife or toothpick, make circles so as to blend the doughs and create the marbled effect.

  6. Bake in the oven for 40 minutes or until cooked inside.
