I love banana cake and I love chocolate, so it's no surprise that this is one of my favorite cakes.

If you have intolerances or are vegan, this recipe has the necessary substitutions - without ever losing the consistency and deliciousness of each slice.


Chocolate and Banana Marble Cake

Serves 6 to 8

Ingredients

  • 1 cup mashed banana (2 to 3 very ripe)

  • 3/4 cup brown, yellow, or coconut sugar

  • 2 tablespoons of melted butter or olive oil

  • 1/3 cup coconut, almond, or other milk of your choice.

  • 1 cup of spelt or buckwheat flour

  • 1/2 cup almond flour (you can choose to use 1 and 1/2 cups whole spelt flour instead of this flour)

  • 2 teaspoons of vanilla extract

  • 1/2 teaspoon of baking soda

  • A pinch of salt

  • 2 tablespoons of cocoa

  • 3 tablespoons of hot water

Preparation
  1. Preheat the oven to 170ºC (340ºF). Line a cake tin with parchment paper. Set aside.

  2. In a bowl, mix the banana, sugar, coconut oil, milk, and vanilla well.

  3. Combine the flours, baking soda, and salt. Mix well.

  4. Remove 1 cup of this mixture and place it in a small bowl. Add the cocoa and hot water. Mix.

  5. Drop spoonfuls of both batters into the prepared pan. Using a knife or toothpick, swirl the batters into circles to create a marbled effect.

  6. Bake for 40 minutes or until cooked through.
