Matcha Cake

Bolo de Matcha - MPL beauty

This is one of my favorite cakes. Super fluffy and delicious! With a delicate matcha flavor. Perfect for a snack or to have at home during the week.

Serves 6 to 8

INGREDIENTS

200g of unsalted butter, melted

2 1/2 cups all-purpose flour

1 teaspoon of baking soda

2 tablespoons of Matcha

3 eggs

3/4 cup brown sugar

1 1/2 cups of yogurt (I used organic vanilla)

1 teaspoon of vanilla (powder or extract)

PREPARATION

Preheat the oven to 170°C. Line a baking pan with parchment paper and set aside.

In a large bowl, sift together the flour, baking soda, and matcha. Set aside.

In a medium bowl, whisk together the eggs and sugar. Add the yogurt and vanilla, mixing until well combined. Add the melted butter (it must be at room temperature; if it's too hot, it will cook the eggs), and mix well.

Pour the egg mixture over the flour mixture, mixing only until combined. Pour the mixture into the prepared pan.

Bake for 40 minutes or until cooked through.

Remove from the oven and eat immediately or at room temperature.
