This is one of my favorite cakes. Super fluffy and delicious! With a delicate matcha flavor. Perfect for a snack or to have at home during the week.
serves 6 to 8
200gr unsalted butter, melted
2 1/2 cups unleavened flour
1 teaspoon baking soda
2 tablespoons of Matcha
3/4 cup brown sugar
1 1/2 cups yogurt (I used organic vanilla)
1 teaspoon vanilla (powder or essence)
Heat the oven to 170 Cº. Line a baking tray with baking paper and set aside.
In a large bowl, sift together the flour, bicarbonate and matcha. Set aside.
In a medium bowl, beat the eggs with the sugar. Add the yogurt and vanilla, mix until well incorporated. Add the melted butter (be careful it has to be at room temperature, if it is too hot it will cook the eggs), mix well.
Turn the egg mixture over the flour mixture, mix just until incorporated. Turn the mixture into the reserved mold.
Bake for 40 minutes or until cooked.
Remove from the oven and eat immediately or at room temperature.
