Relaxing Chai Cake

Bolo de Chai Relaxante

I've been curious about the date cakes I've seen... they're super fluffy, moist, and usually gluten-free. Here's an absolutely delicious recipe with our Relaxing Chai drink.

This recipe yields some hot chai latte vibes in cake form, especially delicious when warm. And for those who prefer, this cake is gluten-free and dairy-free. Sweetened exclusively with dates.

Relaxing Chai Cake

Serves 6 to 8 people.

Ingredients

  • 12 pitted Medjool dates

  • 1 cup (220g) of boiling water

  • 3 large eggs

  • ½ cup (150g) maple syrup

  • 1 teaspoon (5g) of vanilla extract

  • ¼ cup (50g) of melted olive oil or coconut oil

  • 1 cup (170g) of gluten-free flour (cake mix)

  • 1 teaspoon (4g) of baking powder

  • ½ teaspoon (3g) of baking soda

  • ½ teaspoon (3g) of salt

  • 2 tablespoons of Relax Chai Hot Chocolate

Chai Latte Topping

  • 2 teaspoons Hot Chocolate Relax Chai

  • ½ cup (105g) coconut sugar

  • 2 tablespoons (24g) of melted coconut oil

Preparation

  1. Preheat the oven to 180°C and grease a 22x22 cm square baking tin.

  2. In a small bowl, mix all the ingredients for the Chai Latte topping . Set aside.

  3. Place the chopped dates in a bowl with boiling water. Let it sit for 10 minutes, then blend until you obtain a smooth cream.

  4. In a large bowl, whisk together the date cream, eggs, maple syrup, olive oil, and vanilla extract until well combined.

  5. Combine the flour, yeast, baking soda, salt, and RELAX Chai mix until you have a smooth dough.

  6. Pour the batter into the pan and sprinkle the chai latte topping mixture evenly over the top.

  7. Bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out almost clean (with just a few crumbs).

  8. Cut into squares, serve... and get ready to get hooked.
