Pumpkin Bread with Chocolate and High-Fiber Chocolate
Gluten-free and dairy-free
Ingredients
3/4 cup pumpkin puree
2 eggs
1/4 cup maple syrup
1/4 cup coconut sugar
2 teaspoons of vanilla extract
1/4 cup coconut oil, melted and cooled
1 1/2 cups gluten-free oat flour
2 dessert spoons of RELAX
1 1/2 teaspoons of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt
1 teaspoon of cardamom
1/2 cup of chocolate chips
3 tablespoons of pumpkin seeds
Preparation
Preheat the oven to 180°C. Line a loaf tin with parchment paper or brush with a little coconut oil.
In a large bowl, mix the pumpkin puree with the eggs until you have a smooth mixture.
Add the maple syrup, coconut sugar, and vanilla extract. Stir well.
Add the cooled coconut oil and stir just until combined.
Add the oat flour, RELAX, baking soda, baking powder, cardamom, and salt. Mix gently until the flour is fully incorporated (without overmixing).
Incorporate 1/4 cup of the chocolate chips.
Pour the batter into the prepared pan and smooth the top with a spoon.
Sprinkle with the remaining chocolate chips and pumpkin seeds.
Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Let cool for at least 15 minutes before unmolding and cutting.
