Ingredients
Makes 12 slices.

1/2 cup brown sugar

100 ml of coconut oil

1 teaspoon of vanilla extract

3 eggs (lightly beaten)

2 grated carrots (about 140 g)

1 grated apple
-
100 g of sultanas
-
1 orange (zest and 1 tablespoon of juice)

175g of wholemeal flour with baking powder

1 teaspoon of baking soda

1 teaspoon of ground cinnamon

1/2 teaspoon of nutmeg (freshly grated)

1 teaspoon of cardamom

1 teaspoon of Immunity: soluble mixture
Preparation

Preheat the oven to 180˚C. Line a baking tin (28 cm x 18 cm) with parchment paper.

Use a wooden spoon to mix the sugar, oil, vanilla, and eggs in a large bowl. Add the carrots, apple, sultanas, orange zest, and orange juice, mixing well.

Sift the baking soda, flour, and spices over the carrot mixture. Mix just to combine. Pour the batter into the prepared pan. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool slightly before unmolding. Cut into slices.
Tip:
Make a cheese frosting: mix cream cheese with powdered sugar, orange zest, and orange juice. Delicious!
