Gluten-free Christmas cookie recipe

Receita de bolachas de Natal sem glúten - MPL beauty

These Christmas cookies are perfect for cold days and ideal for sharing with loved ones. They're crispy on the outside and moist on the inside, similar to brownies—a real treat! Flourless, they're also a great option for those avoiding gluten. And the best part? You can add chaga , a powerful superfood that transforms this recipe into a true gift for well-being.

Why add Chaga ?

Chaga is a medicinal mushroom known as the "king of mushrooms" for its numerous health benefits. Adding chaga to these crackers not only increases their nutritional value but also contributes to:

  • Protect against the effects of blue light: Chaga contains melanin, a powerful antioxidant that helps protect skin and eyes from damage caused by excessive exposure to blue light emitted by screens and digital devices.
  • Strengthening the immune system: Chaga is rich in antioxidants that help protect the body against oxidative stress.
  • Boost your natural energy: Ideal for colder days when you need an energy boost.
  • Promoting skin health: With anti-inflammatory and antioxidant properties, chaga helps improve the appearance of the skin, making it brighter and healthier.
  • Support overall body balance: Chaga is an adaptogen, meaning it helps the body adapt to stress and promotes balance.

Combined with ingredients like raw cocoa and almonds, these cookies become a little luxury that takes care of you from the inside out.

Christmas Cookie Recipe with Chaga

Ingredients (Makes 20 cookies)

  • 250 g of ground almonds (almond flour)
  • 200g of sugar (you can reduce this amount if you prefer)
  • 40 g of icing sugar
  • 40 g of raw cocoa powder
  • 1 teaspoon of orange zest
  • 1 1/2 teaspoons of ground cardamom
  • 1 teaspoon of chaga (optional, but recommended)
  • ¼ teaspoon of fine salt
  • 2 egg whites (preferably organic)
  • 1 teaspoon of vanilla

Preparation

  1. Mix the dry ingredients:
Place all ingredients, except the egg whites and vanilla, in a bowl. Mix well with a whisk (using the paddle attachment) at medium speed.

  2. Add the liquids:
With the mixer running, add the egg whites and vanilla. Beat for 2 minutes, until the dough forms a ball.

  3. Cool the dough:
Form the dough into a circle, wrap it in plastic wrap, and refrigerate for at least 1 hour (or overnight).

  4. Preparing the cookies:
Preheat the oven to 170°C and line a baking sheet with parchment paper. Roll out the dough between two sheets of parchment paper (to prevent sticking) until it is 1.5 cm thick.

  5. Cut and sprinkle:
Cut out the cookies using your preferred cookie cutters and place them on a baking sheet. Sprinkle with a little sugar on top.

  6. To cook:
Bake for 10 to 12 minutes, or until the bases are lightly golden and the centers are moist.

  7. Finish:
Let it cool completely and, if desired, sprinkle with powdered sugar.

Extra Tips

  • Make ahead: The dough can be frozen for up to 3 months. Simply leave it at room temperature before rolling it out.
  • Personalize the flavors: Try replacing the cardamom with cinnamon or ginger to vary the aroma.
  • Perfect gift: Pack cookies in pretty bags or boxes to give as homemade Christmas gifts.
