Nothing beats some pancakes for breakfast. These are fluffy and delicious with an original twist using one of my favorite mixes: Matcha Latte !

Matcha Pancakes
serves 4
Ingredients
1 cup (125g) of all-purpose flour
2 teaspoons of FOCUS matcha latte mix
1 tablespoon of sugar (or sweetener to taste)
1 teaspoon of baking powder
1/4 teaspoon of baking soda
1/8 teaspoon of salt
3/4 cup (180ml) of milk, whatever you like best.
1 egg
1 tablespoon of melted unsalted butter (plus a little extra for cooking)
1 teaspoon of vanilla extract
Optional Coverages:
Maple syrup or honey
Fresh fruit (such as berries or bananas)

Preparation:
- In a large bowl, sift together the flour, FOCO matcha latte mix, sugar, baking powder, baking soda, and salt. Mix well. Set aside.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
- Gradually add the liquid ingredients to the bowl of dry ingredients. Mix gently until combined, but do not overmix (the batter may be slightly lumpy).
- Heat a skillet over medium heat. Lightly grease with butter.
- Pour about 1/4 cup of batter per pancake into the skillet.
- Cook until bubbles form on the surface and the edges are firm (approximately 2-3 minutes).
- Flip and cook for another 1-2 minutes, until golden brown.
- Place the pancakes on a plate and add your favorite toppings. Sprinkle with a little matcha for a finishing touch.
Tips :
For even fluffier pancakes, let the batter rest for 5-10 minutes before cooking.
Adjust the amount of sugar or matcha to your liking.
