Anyone who knows me knows I'm obsessed with Tiramisu. Tiramisu is undoubtedly my favorite dessert. But it can't be just any tiramisu; it has to be this specific recipe , which I make alternating between the original version and the matcha version. Both are delicious, but the matcha version gives it a unique touch that I love.
If you're also a fan of tiramisu (or matcha), you need to try this recipe. It's simple, delicious, and REALLY worth it!
Ingredients:
For the Matcha Cream:
- 3 egg yolks (at room temperature)
- 3 egg whites (at room temperature)
- 70 g of granulated sugar (or coconut sugar, if preferred)
- 8 ounces of mascarpone (at room temperature)
- 2 teaspoons of premium matcha (sifted)
- 1 teaspoon of vanilla extract
For the Matcha Soak:
- 2 teaspoons of premium matcha (sifted)
- 1 tablespoon of granulated sugar
- 120 ml of water at 75 to 80ºC (it cannot be boiling)
- 24-30 champagne biscuits
To decorate it:
- a pinch of premium matcha (for sprinkling)
PREPARATION:
1. Prepare the Matcha Soak:
- In the matcha bowl, sift the premium matcha to avoid lumps.
- Add a small amount of hot water (75 to 80ºC) and mix vigorously with a chasen (bamboo whisk) until a creamy mixture forms.
- Add the remaining water gradually, whisking until a smooth, frothy liquid forms. Add the sugar and mix well. Set aside.
2. Prepare the Matcha Cream:
- Beat the egg yolks with half the sugar until doubled in volume and a light, whitish cream forms.
- Add the mascarpone to the egg yolk cream and gently mix until smooth.
- Separately, beat the egg whites with the remaining sugar until stiff peaks form.
- Sift 1 teaspoon of premium matcha powder over the egg whites and whisk again until incorporated.
- Fold the matcha-infused egg whites into the mascarpone cream, mixing gently from the bottom up until a smooth texture is achieved.
3. Assemble the Tiramisu:
- Quickly dip the ladyfinger biscuits in the matcha soak (just enough to absorb the liquid without soaking them).
- Arrange a layer of cookies at the bottom of a serving dish.
- Cover the cookies with a layer of the mascarpone and matcha cream.
- Repeat the process until all the ingredients are used up, finishing with a layer of cream.
4. Finalize:
- Sprinkle premium matcha on top as a garnish.
- Refrigerate for at least 4 hours (or overnight) before serving.
