These days between Christmas and New Year are undoubtedly different. They seem to run slower, which is good to reflect on what we intend to manifest for 2025!
I leave with this delicious recipe of cute pancakes with one of my favorite ingredients: Matcha!

Matcha's cute pancake recipe

Ingredients
1 cup (125g) of flour without yeast
2 teaspoons of matcha
1 tablespoon of sugar (or sweetener to taste)
1 teaspoon of yeast powder
1/4 teaspoon baking soda
1/8 teaspoon salt
3/4 cup (180ml) of milk
1 egg
1 tbsp of melted salt butter (a little more to cook)
1 teaspoon vanilla extract
Optional coverage:
Syrup or honey
Fresh fruits (such as red fruits or banana)
yogurt

Preparation:
In a large bowl, sift the flour, matcha, sugar, yeast, baking soda and salt. Mix well. Reserve.
In another bowl, mix the milk, egg, melted butter and vanilla extract until a homogeneous mixture.
Gradually add the liquid ingredients to the bowl of the dried. Mix gently until you incorporate, but without moving too much (the dough can be slightly irregular).
Heat a skillet in medium heat. Grease slightly with butter.
Pour about 1/4 cup of pasta per pancake in the frying pan.
Cook until bubbles are formed on the surface and the margins are firm (approximately 2-3 minutes).
Turn and cook another 1-2 minutes until golden.
Place the pancakes on a plate and add the roofs of your choice. Sprinkle with a little matcha for a finishing touch.
Tips:
For even cutest pancakes, let the dough stand for 5-10 minutes before cooking.
Adjust the amount of sugar or matcha to your taste.
