This week was full of dishes and I wanted to share with you the best recipes that came out of my kitchen.
I make this "sushi bowl" almost daily; I even bought specific sushi rice and appropriate seasonings. I use frozen salmon from Ikea. I end up making the recipe when I get back from my son Diogo's basketball practice. Since it's late, I preheat the oven to the highest setting. I season the salmon with teriyaki sauce, ponzu sauce, and rice vinegar, and put it in the oven while I make the rice (it literally takes 10 minutes).

I stumbled upon the best brownie recipe ever; you can see the video and recipe here . This recipe is more cakey than fudgy , but apparently that's how I like it (I always thought it was the fudgy version).

Attention to anyone making this recipe : The pan needs to be small, I use one like this . Ovens vary, as I said in the video I followed the recipe exactly and in subsequent times (yes, I've made this recipe several times) I left it in the oven for less time, otherwise it gets too dry since it doesn't have as much fat as other recipes.
I also made a more old-school recipe, baked pastries (the dough is made with guarana soda) from the Brazilian TV presenter Ana Maria Braga.
Baked guarana pastry
INGREDIENTS
1 cup of guarana soda
500g wheat flour, I used white spelt flour.
300g unsalted butter at room temperature
Salt to taste
1 beaten egg (for brushing)

I put all the ingredients (except the egg for brushing) in a food processor and blended just to mix.

I turned it out onto a floured surface, covered it with a cloth, and let it rest for 30 minutes (you can let it rest until you finish making the filling).

I made it with a vegetable filling (onion, beetroot, leek, lots of spinach and fresh thyme). After sautéing it well, I let it cool a bit and added the closest thing to Catupiry cheese that I could find around here (at least that I know of) - queru creme (creamy cheese ).

I placed them in hand-cut circles of dough and closed them.

I brushed it with beaten egg and baked it in the oven (200ºC) until golden brown.
The dough is simply divine!! And the filling was wonderful. For the children, I made shredded chicken which I also mixed with the cheese.
