The weekend has arrived, bringing with it more rain and a change in time. Did you know that the "true" time we should be following is winter time? When I discovered this, I felt more relaxed and realized that autumn and winter have a heavy connotation associated with them, which isn't true. I'm going to use this new knowledge to enjoy, recover, and regenerate this season... to let my body, my ideas, and my energy recharge.
That's why I wanted to share these Matcha Waffles (or pancakes) today. A perfect recipe to help us reflect on everything this weekend brings, especially more calm and self-care.

If you don't have a waffle maker, don't worry! Simply proceed with the recipe as you would when cooking pancakes.
Makes 6 to 8 mini waffles - or pancakes.

1 cup of flour, I use white spelt flour.

2 teaspoons of Matcha

1 teaspoon of yeast

pinch of salt

½ cup rolled oats (lightly crushed)

2 tablespoons of coconut oil or melted unsalted butter

180 ml of milk, you can use plant-based milk if you prefer.

1 egg

1 ripe banana (mashed)

1 teaspoon of vanilla extract
Toppings:

Vanilla yogurt
-
Maple syrup
-
Red fruits
-
An extra touch of matcha powder
Preparation
Sift the flour, matcha , salt, and yeast into a large bowl.
Add the crushed oats (you can do this in a blender - do not sift). Mix well.
In another bowl, combine the slightly cooled melted coconut oil (or butter), milk, egg, mashed banana, and vanilla. Mix well.
Gently incorporate with the dry ingredients until you obtain a smooth dough. If you find it too dry (as the size of the banana may vary), add more milk.
Heat and grease the waffle iron (with butter or coconut oil).
Cook until golden brown.
Serve with vanilla yogurt, red berries, and maple syrup to taste.

So always be suspicious when the price is low... and check the color. It has to be a vibrant green powder, with a fresh look... nothing pale, dark, or "wilted".
