Vegetable noodles with almond sauce and ginger

 

Perfect summer recipe, super light, healthy and delicious. With nodes made of fresh vegetables, such as carrots, beets and turnip.

I also made a video to help recreate this recipe at home.

serves 4

Noodles

  • 1 beet

  • 1 turnip

  • 2 Carrots

 

Almond sauce and ginger

  • 1/2 cup of almond butter 

  • 1 piece of ginger to taste

  • 1 clove of garlic

  • 2 C Tamari soup (or soy sauce)

  • 1 c cider vinegar soup or umeboshi

  • 1 c honey soup

  • 1/2 lemon juice

  • 1/2 cup of basil

  • 1/2 cup of coriander

  • 1/4 cup of water

Preparation
1. Start by making the vegetables. Cut the ends of each vegetable. Use the spiritual machine according to its instructions. Cut the noodles into smaller pieces. Put in a bowl and set aside while making the sauce.

2. To make the sauce, place all ingredients in a blender glass. Beat until you get a creamy but still with pieces of the herbs. Write over the noodles.

3. To serve, if you wish to sprinkle with chopped almonds, papoila seeds, pumpkin and more coriander.
