1 dessert spoon of the soluble mixture FOCUS
2 cups flour, can be gluten-free
1 teaspoon baking powder
½ Teaspoon ground ginger
½ Cup olive oil or melted coconut oil
½ Cup almond butter
¼ Cup maple syrup
1 teaspoon vanilla essence
1/2 cup white chocolate, broken into pieces, used lactose-free
Heat the oven to 170 degrees. Prepare a baking tray with parchment paper. Book.
In a large bowl, whisk together the protein, flour, baking powder, cardamom and ginger. Mix well.
Stir in the olive oil, almond butter, syrup and vanilla. Wrap tightly.
Add the chocolate in pieces and incorporate gently. Form balls from the dough, I use an ice cream scoop. Flatten each wafer with the palm of your hand if desired. Bake in the oven for 10-12 minutes or until they start to Brown.
