Beetroot soup and roasted apples

Do not run away for reading beet soup, which it convinces even those who say they know the earth. The trick is to take it! The taste is much sweet and smoother, on top combined with the apples. In fact, baking vegetables is infallible to turn any vegetables into delicious soups.

And if you are still in doubt, I leave some good reason to start eating beets:

Ingredients
Serves 6

  • 6 medium beets, cut into pieces

  • 2 carrots, cut into pieces 

  • 1 onion cut into bedrooms

  • 2 peeled apples, pitted and cut in bedrooms

  • 4 integer garlic cloves

  • 4 branches of thyme, rosemary or other herb you like

  • 6 cups of vegetable broth or water, but if you need

To serve
  • dill

  • Fraiche cream or natural yogurt (optional)

 

Preparation

  1. Heat the oven at 200ºC. In a baking sheet put the beet, carrot, onion, apples, garlic and thyme or rosemary. Drizzle with olive oil and season well with salt and pepper. Cover with aluminum foil and bake for 20 minutes. Remove aluminum and bake for another 10 minutes or until the beet is soft. Pour out the thyme and remove the skin from the beets.

  2. Beat the mixture in a blender (two to three times) with the broth/water, until a thick and creamy soup, add more water if you need to get a desired consistency.

  3. Transfer to a pan, prove and adjust the seasoning with salt and pepper to taste. Let it boil and bubble for a few minutes. Serve with some chopped frail and chives, if you want.

*TIP:

Keep the beets of the beet to chop and sautage with garlic and olive oil. It's delicious!

It can replace carrot with pieces of pumpkin.
