Caramel and Apple Popcorn
Why not pop some popcorn? The weather is calling for something more homey and warm. This popcorn is super indulgent, but super healthy ;)
The trick? Use the oven! Try it, you won't regret it.
Ingredients:
Serves 4 to 6

1 tablespoon of coconut oil

1/2 cup popcorn kernels

1/4 cup maple syrup or other sweetener of your choice

1 tablespoon of almond butter
-
1 tablespoon of raw cocoa powder

1 teaspoon of litter

1 teaspoon of ground cardamom
-
1 teaspoon of vanilla extract

1/2 teaspoon of fleur de sel

1/4 cup chopped almonds or walnuts
Preparation:

Preheat the oven to 160ºC. Line a baking sheet with parchment paper and set aside.

Melt the coconut oil in a medium saucepan over high heat. Carefully add the corn kernels and cover. Shake the pan well every 10 seconds while the popcorn is popping to prevent burning. When the popping stops, remove the pan from the heat and pour the popcorn into a large bowl.

In a blender, add the maple syrup, almond butter, cocoa, maca, cardamom, fleur de sel, and vanilla. Blend until combined.

Add the almonds to the popcorn. Drizzle with the almond mixture and toss to coat. Spread the popcorn on the prepared baking sheet and bake for 6 minutes. Turn the popcorn over with a large spoon or spatula so that it cooks evenly. Bake for another 2 to 3 minutes, or until the popcorn is golden brown and colored.

Remove from the oven and sprinkle with another pinch of fleur de sel. Let the popcorn cool slightly on the baking sheet before eating.
*Careful, let the popcorn cool down a bit after taking it out of the oven. Waiting will save you some burnt and sticky fingers. It's well worth it!
