Chocolate mousse and tofu

This is a recipe I have made for over 20 years. The years pass and always come back to her. It is really very fast to do and contain only 4 ingredients that I always have at hand.

So when I need "that" sweet, which has to be fast and healthy sometimes I remember this mousse.

Serves 4


  • 100gr of chocolate
  • 300gr of silken biological tofu, ambient temperature 
  • 2 tablespoons of acer syrup, extra if desired
  • 1 teaspoon vanilla powder or essence


  1. Melt chocolate in double boiler. Stir from time to time until melted. Remove from heat and let it reach room temperature.
  2. Drain the tofu gently so as not to undo. Go through cold water. Place in a blender cup along with the Acer and vanilla syrup. Add the melted chocolate and beat until a creamy mixture.
  3. Divide by glasses or bowls and store in the refrigerator for 20 minutes or until firmer. This step is really important for the mousse to be very creamy and thick.
  4. Decorate with red fruits if you want and enjoy!

*I only use bio certified tofu. Very important indeed.
